Adoro - Extra Virgin Oils

“Extra virgin olive oil is essentially the naturally extracted juice from fresh olives. The olives are crushed into a paste, and the oil is physically extracted from this paste without the use of chemicals or excessive heat,” Australian olive oil expert Richard Gawel notes. “Extra virgin olive oil has a distinctive olive fruity aroma and flavor and it contains natural antioxidants.” Refining, he adds, is a more intricate process using acids, alkalis, steam and other agents. “The refining process removes all of the aroma and flavor substances out of olive including its natural antioxidants,” Gawel explains. “Artificial antioxidants need to be added back to give the refined olive oil a reasonable shelf life.” Simply put, extra virgin means that the oil is made only from the fresh juice of olives, and that it tastes good: extra virgin olive oil is produced by mechanically pressing the olives without the use of chemicals or solvents.
Extra virgin olive oil  must not have any sensory flaws, and must meet rigid chemical standards.

Healthy fats, such as extra virgin olive oil, can help you fight stress, improve mood swings, decrease mental fatigue and can actually help you manage your weight. While fat in general gets a bad reputation, not all fats are bad, (in fact they are good), and you just have to make the right choices! Harvard School of Public Health recommends some healthy fat intake.

Cooking with EVOO
Extra virgin olive oil is one of the best oils to cook with. Extra virgin olive oil is perfect for cooking, frying, sautéing, poaching, dressing and baking. Cooking with olive oil also brings an additional flavor profile to your dish that’s unique to only extra virgin olive oil.

The extra virgin olive oil you choose in preparing your food can complement the flavors of your ingredients by blending in as a nice buttery aid in the cooking process and contrast the flavors of your ingredients by highlighting the oil and bringing out the fruitiness or bitterness of the oil, thereby adding more richness and complexity to your dish.

Baking with EVOO

Using olive oil instead of butter is also a great way to cut saturated fats out of your favorite treats. We bake with extra virgin olive oil because it adds a wonderful, nuanced flavor to baked goods. Baking with extra virgin olive oil is easy with our conversion chart below.

CORATINA Medium – Southern Italy Olive Cultivars (Puglia)
Made from 100% Coratina olives, hand-harvested and rigorously cold-pressed within a few short hours of being plucked from the trees, this olive oil has a classic Pugliese taste coupled with low acidity. Its bold-yet-balanced suite of flavors is kept intact by state-of-the-art milling and handling. The love and dedication that goes into producing this exquisite example of Italy’s finest extra virgin olive oils has led it to stand out among all other Italian cultivar base on its complexity.  Coratina is among the highest in antioxidants and solid lipid structure among all other Italian cultivars. Coratina’s high polyphenol count places it at the top of all Italian extra virgin olive oils, giving the oil its characteristic pungent and peppery aftertaste. Coratina extra virgin is delicious in bruschetta rustica with toasted bread, a rubbing of raw garlic and a sprinkle of sea salt. Try it over bitter lettuce salads (radicchio, arugula, chicory) and summer tomatoes pair with our Traditional or Fig Balsamic vinegars, or by itself on gazpacho or other chilled summer soups. This Coratina is also perfect as a finishing oil for grilled or roasted meats, fish and poultry, in herb marinades, or as part of a dressing for grilled vegetables.

Canisese Mild EVOO – Italy
A native to central Italy, the Caninese olive has been producing exceptional quality oil for centuries in an area renowned for its olive oil for thousands of years. 
With its beautiful green-yellow color characteristic of its cultivar, our Caninese extra virgin displays the best examples of its kind. Fruity in aroma with notes of almond, artichoke and freshly-cut grass, it is pleasantly balanced by a slightly bitter, pungent and herbaceous taste.
Pair with our Pear or Blueberry Balsamic vinegars for a delightfully sweet-yet-tart balance of flavors in a dressing for salads or roasted vegetables. On its own, the Caninese is an excellent choice for dipping crusty artisanal breads or to finish soups, pastas, stews or other grain dishes.
Picual Medium EVOO - Spain
Picual is the most important olive variety in the world and is the most widely cultivated variety in Spain. Olive oil produced from Picual olives has a fruity flavor with hints of almond and an aroma of apple. This fine Spanish Picual is characteristic of its variety, featuring a light, fruity flavor and notes of apple in its aroma. Picual has a surprising peppery bite that comes through delightfully when used raw. This oil has a light golden color and is lighter in consistency than its Chilean counterpart. Its sweet, buttery flavor is also more pronounced than the lighter Arbequina.

The Spanish Picual is one of our most popular cooking oils. Use this charming oil when sauteing or baking, or brush it on marinated meats and vegetables to seal in flavor before cooking.
